More reasons why I can't loose weight.

I love fresh fruit. It is one of my favorite things about summer. What is better than fresh fruit? Why fresh fruit drizzled in white chocolate, of course!
You should try this.
Soon.
Like now.

Fruit Salad with Chocolate Sauce
4 cups fruit: (fresh peaches, nectarines, plums, strawberries. I also use raspberries, and blueberries-- but I use the frozen kind without the juice-- they get mushy otherwise)
Any colorful fruit, sliced in a large bowl. Chill until ready to serve.
*I really don't measure either how much fruit I am using... The sauce makes a lot!*

Sauce:
1 20 oz package white chocolate chips
1/2 pint whipping cream

Heat cream over low heat. When the cream is warm, add the chocolate chips, and stir until melted. Remove from heat. Pour over fruit and serve or serve on the side.

Now. Just cause I'm nice and all, I am letting you in on my little secret. When I make this "salad" I also make a really amazing chocolate cake. I like to serve it with the berries and the chocolate sauce. Holy sugar overload, batman! It is divine!

Really.
If you make this, your family will sing your praises and get congress to name a holiday after you and then they will all die happy.
Well. Maybe not.
But close...

One thing to note: It's really important to follow this recipe exactly.

Darn Good Chocolate Cake
Vegetable oil spray for misting the pan
Flour for dusting the pan
1 package (18.5 oz) plain devils food or Dark Chocolate Fudge cake mix
1 package (3.9 oz) chocolate instant pudding mix
1 C sour cream
1/2 C water
1/2 C vegetable oil
1 1/2 C semi sweet chocolate chips
4 large eggs

Preheat the oven to 350. Lightly mist a 12 Cup bunt pan with Pam, then dust with flour. Shake and set aside. Place the cake mix, pudding mix, sour cream, water, oil, and eggs in a large mixing bowl. Blend with mixer on low for 1 minute. Stop and scrape down the sides of the bowl. Increase mixer speed to medium and beat for 2-3 minutes more, scraping the sides down again if needed.

The batter should look thing and well combined.

Pour the batter into the pan, and smooth out. Bake in approximately 58-62minutes, or until the cake springs back when touched and is just slightly pulling away from sides. Let cake cool for 20 minutes. Run a long, sharp knife around the edge of the cake, and invert onto a cooling rack to cool for 20 more minutes. Sprinkle powder sugar all over and lay the berries around the sides of cake and in the center. It is very pretty and oh so tasty! Once cut with berries drizzle the white chocolate sauce on top.

Seriously. Oh. So. Good.
